The Alchemist is part chemistry and part wizardry: a fruit driven, new world cider that includes a small volume of intensely tannic Fuero Rous for structure.
A modest volume of fresh apple juice was added during blending to provide a freshness to the palate and nose. 5.7% ABV

of malolactic fermentation and a touch of

Paynter's Pear cider is made with Doyenne
du Comice pears.
During blending a small portion of French bittersweet cider apples were added for structure and depth, and some fresh pear juice for sweetness and aroma.
